From Reservoir to Tap: The Journey That Shapes How Your Water Tastes

Most of us turn on the tap without much thought for where the water has come from. But the answer to why your water tastes the way it does almost always comes back to the journey - the carefully managed process that takes raw water from its source and turns it into something you'd actually want to drink.
Here's what happens along the way.
Step 1: Collection and storage
Water is gathered from a reservoir, lake, river, or underground borehole - each with its own flavour character. Even in storage, organic and inorganic matter accumulates, and the water begins to take on the character of its environment. Everything that happens next matters.
Step 2: Early disinfection
Depending on raw water quality, an early disinfection step - using ozone, hydrogen peroxide, chlorine, or other disinfectants - kills off microorganisms and parasites, and begins breaking down organic material before the main treatment starts.
Step 3: Removing the cloudiness
Natural water contains suspended particles - clay, mineral fragments, organic material - that affect its appearance. A process called flocculation uses safe chemical treatments to make these particles clump together, so they can be removed by sinking or floating them out. Cleaner water is drawn off, leaving the sediment behind. Elegantly simple.
Step 4: Sand filtration
The clearer water passes through large sand filters. In slow sand filtration, a living community of microorganisms on the sand's surface absorbs organic compounds - cleaning the water in ways no chemical process alone can match. Biology doing what biology does best.
Step 5: Activated carbon - the taste stage
This is where flavour is most affected. Activated carbon - extraordinarily porous granules with a surface area of roughly a third of a football pitch per gram - converts chlorine residuals into odourless, tasteless chloride, and traps disinfection by-products, agricultural traces, and organic flavour compounds. When carbon filters are fresh and well-maintained, the water coming through can taste genuinely excellent. When they're not, things slip through quietly. Nobody notices until the tap water starts tasting like a garden pond.
Step 6: Adjusting the mineral balance
Depending on the source, mineral content may need adjusting - softening hard water, reducing acidity, or fine-tuning specific mineral levels. This stage has more influence on final taste than most people realise.
Step 7: Final disinfection
Ultra-violet light may be used to reduce bacteria and help eliminate off-flavours. Then a final dose of chlorine is added to keep water safe across potentially hundreds of kilometres of pipework. That faint chlorine taste you occasionally notice is the residual disinfectant still doing its job.
What happens in your own home matters too
Even after all of that, water still has to travel through your building to reach your tap. Old pipework - particularly lead pipes in older properties - can affect both safety and taste. Poorly installed pipes, tanks, and drains are a more common culprit for off-tasting water than most people suspect. Water companies sometimes take the blame for something that's actually happening much closer to home.
